After working in a number of prestigious establishments, including Le Bristol Paris and the kitchens of the George V, and setting up their restaurant SOURCES in Nantes, Ingrid and Guillaume Decombat were keen to develop their skills in a five-star establishment with an international clientele.
So our Castle opened its doors to them...
Talented backgrounds
Ingrid and Guillaume, our new chefs, trained at the Ferrandi school in Paris, renowned for the likes of Nina Métayer and William Ledeuil.
Guillaume began his apprenticeship at the Bouche à Oreilles restaurant before perfecting his skills in the kitchens of the Hôtel Le Bristol Paris. His expertise in combining flavours has led him to positions of responsibility, including Sous Chef at L'Uni Nantes.
Ingrid has nothing to be ashamed of in her career. She proved herself under Chef Flora Mikula at the Auberge Flora, then climbed the ladder to become Chef de Partie at the prestigious Hôtel George V in Paris. On her return to Nantes, she took up the same position at LuluRouget, adding to her expertise as she travelled.
In 2016, the couple decided to launch their own establishment, SOURCES, a committed and free-spirited cuisine inspired by local producers. Their talent was quickly recognised with the Grand de demain trophy from the Gault et Millau guide. This distinction is in addition to their previous awards: the Coup de pouce des Tables de Nantes in 2019 and the Assiette Michelin in 2021.

Our new season was marked by the departure of Chef Clément Vincent and the arrival of the new owners, Ingrid and Guillaume Decombat: ‘We wanted to find a majestic place with a strong identity, great potential and freedom of expression for our cuisine’. By taking the helm of our already talented brigade, Ingrid and Guillaume are committed to breathing new life into the restaurant by shaping a strong culinary DNA, characterised by lively, generous cuisine and authentic flavours.
Shared values
Shared values unite these new players in the culinary history of Maubreuil: ‘At the Château, we are lucky enough to have a permaculture garden where the produce is picked and cooked the same day, and the team of market gardeners at Ferme de Maubreuil are always ready to listen. It's a valuable exchange of ideas that will help us to go from strength to strength'. This synergy represents a real opportunity for the chefs, who see tomorrow's cuisine as local, responsible, plant-based and sustainable.
