At the heart of La Table du Marquis, the gastronomic restaurant at Château de Maubreuil, Gaïa embodies the passion, creativity and determination that are essential to the service in the dining room. Her diverse background and enthusiasm make every meal an unforgettable experience for the Château's guests.
Meet Gaïa, Chef de Rang.
Gaïa began her career in the brasserie at just 18, progressing from commis de salle to chef de rang. In search of new challenges, she joined the Château de Maubreuil to discover gourmet dining and offer a more attentive service. "The monotony of the brasserie was beginning to bore me, and here I'm constantly learning new things. I've also had the opportunity to discover some incredible wines and spirits in addition to fine cuisine," she explains.
Having arrived in September 2023 as a commis, Gaïa quickly progressed within the team and became a chef de rang in June. She plays a key role in the running of the service, liaising between kitchen and dining room, supervising the commis and sommelier, and delivering an exceptional culinary experience. "My job is to provide a detailed description of the dishes to give customers an incredible experience," she says.
Gaïa's challenges and passions
What Gaïa is passionate about is the diversity of each service and the continuous learning. "Every day is unique and I have the opportunity to learn continuously. Working in a place as magnificent as the Château is a real pleasure every day," she confides. She is proud of her participation in the magical five-step service based on the five senses during New Year's Eve on 31 December. "I was proud to take part in a sensory experience by recording my voice describing the dessert. The customers were blindfolded and discovered their desserts once the recording was finished. They loved it."
Outside of work, Gaïa has a wide range of interests and passions. She enjoys the creative arts such as pottery, painting and drawing, as well as video editing. "I've actually created an Instagram page to share my pottery creations combining photography too." She also enjoys exploring bars and restaurants to discover new cocktail creations.

With her brewery experience, Gaïa has acquired solid customer service and relationship skills. "I'm used to working in a fast-paced environment and adapting to changing customer needs. These skills enable me to make a significant contribution to the Château team," she says. Her enthusiasm, determination and good humour are invaluable assets to the team. One memorable moment was when she discovered that customers she thought were English were actually French. "They burst out laughing when they saw my reaction. It was a really funny and memorable moment where we shared laughs."
Gaïa particularly appreciates the caring atmosphere and team spirit at the Château. "I'm surrounded by a team of young, dynamic and competent colleagues. Collaboration and mutual support are key values within our team, which enables us to meet every challenge successfully. Working in such a positive environment motivates me to give my best every day. If anyone were to describe Gaïa, it would be a mixture of clumsiness and determination. "Sometimes things get out of hand, but I never give up!"
