The origins of this black diamond
There are more than thirty edible species in the truffle family, each with unique taste characteristics and specific harvesting periods. The most famous of all is the Périgord black truffle. Appreciated for its subtle scent of undergrowth, earth and peppery notes, it is a rare and sought-after product, particularly by gourmet chefs. Thanks to its exceptional qualities, the truffle has conquered the hearts of gourmets.
Cavage: the art of finding truffles
To unearth this precious nugget in the wild, you need to master the art of cavage. This term, specific to truffle-growing, refers to the action of finding and digging up truffles. This task calls for a number of factors to be taken into account, such as the nature of the soil, the climate and the presence of symbiotic plants. A valuable ally in this quest is the truffle dog, whose mission is not limited to digging, but above all consists of detecting the truffles buried underground, thanks to his exceptional sense of smell.
A product you can cook at home
It's not just great chefs like Alain Ducasse or Anne-Sophie Pic who have the ability to sublimate dishes with truffles. You too can succeed in cooking this dish with elegance. To make a success of your truffle dish, you need to follow a few rules:
- Buy fresh truffles, preferably from markets or specialist shops.
- Pay particular attention to the labelling and the origin of the product.
- Eat your truffles quickly after purchase to preserve all their flavour.
You can also opt for processed alternatives, ideal for gradually discovering this product or to enhance your culinary creations. You'll find truffle-flavoured Parmesan cream, truffle-flavoured tapenades and truffle-flavoured olive oil in fine grocery shops.
