In the magnificent kitchen of the "La Table du Marquis" restaurant at Château de Maubreuil, Clément concocts refined dishes with particular attention to detail, transporting your taste buds to the various countries that have shaped his career as a talented chef.
Meet Clément Vincent, Head Chef.
A native of Nantes all his life, Clément was introduced to the delights of the kitchen as an apprentice at Maison Baron Lefèvre in Nantes. His desire to immerse himself further in the world of haute gastronomy led him to Paris, where he spent six years honing his skills in prestigious establishments such as Drouant, Le Coq Rico and Le Crillon. Fueled by his passion for travel, his career also took him to Asia and Russia, where he had the opportunity to discover and appreciate the diversity of cultures and flavors.
After returning to the Nantes region, it was during a dinner at Château de Maubreuil that Clément "fell under the spell of the establishment". He then decided to try his luck by submitting an unsolicited application, which enabled him to begin his adventure at the Château on June 1, 2022, and since September of the same year, he has proudly held the position of Head Chef. As an ultratrail runner, a demanding discipline that requires you to push your own limits, Clément is ideally suited to the role of Chef. Clément's greatest pride lies in the loyalty of his kitchen team, whose "mentality is entirely focused on the quality of the food served". Together, they have developed the ability to "adapt to all situations and events at the château", guaranteeing a total and memorable experience for every guest.
His day-to-day responsibilities are varied and demanding. He distinguishes himself by "continually creating new dishes", by carefully supervising his kitchen team, and by ensuring that every ingredient is "treated with respect and sublimated to offer each customer an exceptional gastronomic experience". Clément confides: "What excites me about my work is using products from our garden and making them sublime, seeing the blossoming of my staff and the smiles and wonder of our customers when they leave."
A landmark experience for Clément was the Relais & Châteaux induction dinner in October 2022, where he had the privilege of meeting celebrated chef Olivier Roellinger. This intense and moving exchange reinforced his passion for gastronomy and his commitment to excellence.
At Château de Maubreuil, Clément particularly appreciates the majestic and inspiring setting that surrounds his daily work. His role as Chef de Cuisine plays a key role in the château's refined aesthetic, where nature and gastronomy come together to create a unique and authentic experience for guests. Clément embodies simplicity and authenticity, values that are reflected in his approach to life and his profession, making him a valuable asset to the Château de Maubreuil team.
