He is dedicated to satisfying each and every one of our customers by taking care of every detail of their meal in our gourmet restaurant. Benjamin, our lunchtime service manager, is passionate about his work and has an entrepreneurial spirit combined with a constant quest for excellence. Meet the man who joined us a few months ago as our lunchtime service manager. 

The son of a restaurant owner, Benjamin has always been passionate about the restaurant business. He began his studies at the Talence hotel school in Bordeaux, where he took a complementary barman qualification and a complementary sommelier qualification. In various palaces such as Le Ritz, Le Bristol and Le Prince de Gall, Benjamin became a sommelier and a barman. 
After 8 years in the restaurant business and training in molecular cuisine in Dijon, he opened his own company based on molecular cocktails, a little known discipline: "Little by little, the company made a name for itself and we worked as consultants on the opening of establishments, on the bars at the Cannes Film Festival, and on the organisation of various events for major brands such as Dior, Valentino and Ralph Lauren.

With the Covid crisis behind us, it took a while for events to get back on track. "Back in Nantes, I had two choices: to set up an event organisation or to find a job in the luxury sector, my basic profession. The Château de Maubreuil was the only establishment that matched the style and setting I was looking for and it was a real pleasure to join the teams." From breakfast to lunch, Benjamin ensures that the service runs smoothly and that each of our guests receives a service worthy of our 5-star establishment, in a setting that is always exceptional. 

"This passion for the restaurant business has been with me since I was very young. I am committed to satisfying every customer who comes to La Table du Marquis for breakfast or lunch. For our customers to enjoy their experience, our service must be impeccable before they arrive and until they leave. A customer who leaves with a smile on his face and happy with the moment he has just experienced is a real source of motivation for us," concludes Benjamin.
