Meet Kleven, Head Barman.
Kleven will be setting up home at Château de Maubreuil in December 2019, having just won the Best Apprentices of France competition. His presence among us is the fruit of word-of-mouth: "A friend recommended me to the restaurant manager at the time, and the Maubreuil adventure began for me". A lover of authentic moments, conviviality and sharing guide his daily life, as do the precious moments spent with his loved ones. With his lively spirit, Kleven brings humour and freshness to the Château, a breath of creative energy always ready to innovate.
With a distinguished past at the Normandy Barrière in Deauville, his current position as Head Barman gives him the space to give free rein to his creativity. Fusing gastronomic influences with mixology techniques, Kleven likes to surprise by combining unexpected ingredients to create cocktails with unprecedented flavours.
Kleven is inspired by the artistic atmosphere of the Château de Maubreuil. Drawing on the travelling essence of this prestigious establishment, each Kleven cocktail is an invitation to a gustatory journey. Always ready to share his knowledge, he confides: "Passing on my passion to cocktail aficionados is a pure pleasure". His endless curiosity, coupled with a thirst for learning, has even led him to create his own digestive cocktail, a signature product now available in the château's boutique.
At the château, Kleven is a source of high standards and collaboration. "Cooking is very close to my heart, because I've practised the art myself. This partnership with our chefs is invaluable, as they teach me techniques that I then incorporate into my creations", he shares, emphasising the importance of mutual support as a pillar of his professional ethic.
Kleven's humour is also infectious: "At the Normandy in Deauville, the rapper Karis came for a drink. There wasn't room, so I suggested they come back later. Fortunately, everything went off without a hitch!"
For Kleven, the hotel and restaurant business is synonymous with laughter and solidarity between teams. These values, he says, "keep the magic of this sector alive". A magic that he proudly embodies as Head Barman at the Château de Maubreuil.
