Bertrand, at the heart of the flavors of Château de Maubreuil, embodies the quintessential passion, innovation and perseverance that characterize the culinary brigade at La Table du Marquis. His original and inspiring career path has led him to fully embrace his vocation within the world of gastronomy, delighting guests at the Château.
Meet Bertrand, Second de cuisine.
Initially employed as a notary, Bertrand soon realized that his true aspiration lay in the delicate art of cooking. A decisive meeting with a chef at an open day was the catalyst for his professional reconversion.
Embracing this new passion, Bertrand immersed himself in demanding training at prestigious Parisian palaces, honing his art for three years. His journey led him to the Château de Maubreuil, when it opens in 2019. However, driven by a desire to expand his culinary horizons, he temporarily left our estate to accompany his wife near Château de Chambord, helping to open Les Sources de Cheverny and earn a Michelin distinction. After this enriching interlude, the call of Maubreuil made itself felt: "After two years away from Maubreuil, it was time for me to return," he confides with emotion.
Bertrand stands out for his daily commitment to excellence, orchestrating gustatory symphonies at both breakfast and lunch. The satisfaction of creating, innovating and maintaining impeccable quality drives every day. His lunch menu, constantly renewed with the seasons, bears witness to his ambition to surprise and delight even the most demanding palates. An expert in spices and marinating techniques, Bertrand also excels in the art of wood-fired cooking, lending authenticity and character to his dishes.
Away from the stove, Bertrand reveals a rich and eclectic personality. An enthusiast of general culture and metal music, he recalls with a touch of nostalgia his encounter with the band Scorpion, underlining one of the many memorable moments he experienced thanks to his position at the Château.
What particularly resonates with Bertrand is the family spirit that prevails at Château de Maubreuil, a place where professional rigor coexists harmoniously with conviviality. "Working happily while striving for excellence creates an environment conducive to creativity," he concludes.
