He likes to discover new wines and to make them discoverable in his turn, to establish surprising food and wine pairings and to satisfy his customers. Maxime, our sommelier at Château de Maubreuil is a wine enthusiast who will know how to delight your taste buds and harmoniously match a wine to your dish.
Maxime's family was not big on wine and yet, after his Baccalaureate in Economics and Management, our sommelier reoriented himself towards a professional license in the culinary arts and table arts before working in vineyards as a tourist guide and marketing manager. A few years later, Maxime joined the city of lights and started a sommelier training at the Franck Thomas Institute. After a first experience as a sommelier in Paris, Maxime felt the need to work and live in a human-sized city and returned to Nantes where his passion for wines will continue to grow and where he will work for the restaurant Maison Bagarre and the Brasserie Canopée.
For a month and a half, Maxime joined the Château de Maubreuil as a sommelier at La Table du Marquis and assists our head sommelier Anthony. "Working at Château de Maubreuil means working in an exceptional setting where creativity is welcome, where unlikely food/wine pairings can be proposed, tested and approved and where the teams are friendly and pleasant", he explains.
If Maxime had to choose only one wine, he would choose the Cuvée Garance from Domaine des Maisons Rouges: "The Cuvée Garance is a Coteaux-du-Loir, a small appellation located in the Sarthe region. Fresh, light and easy to drink, it has aromas of red fruits and white pepper. It's a wine that I like to offer my clients and that easily adapts with many dishes."
The requirement, humility and desire to please are essential qualities for this position. If Maxime knows a lot about wines today, thanks to his training and professional experiences, he keeps in mind that one can never know everything and that there are always many things to learn about oenology.
